Ingredients for 4 Servings:

– 280 g of pasta
– 2 medium eggplants
– 400 g of peeled tomatoes or fresh cherry tomatoes
– 150 g of grated Latterie Riunite ricotta salata cheese
– fresh basil
– clove of garlic (optional)
– extra vergin olive oil
– salt and pepper to taste

Preparation:
Cut the eggplants into 1 cm thick slices and place them in a large bowl filled with salted water for about 30 minutes to remove excess bitterness. Prepare the sauce: Heat a drizzle of olive oil in a pan over medium heat. Add the tomatoes or cherry tomatoes, garlic, salt, and pepper. Cook for 15-20 minutes, stirring occasionally. Fry the eggplants: Rinse and pat dry the eggplant slices. Fry them in hot oil until golden brown. Cook the pasta according to package directions until al dente. Assemble the dish: Drain the pasta and toss it with the tomato sauce and fried eggplant slices. Generously sprinkle with grated Latterie Riunite ricotta salata cheese and garnish with fresh basil leaves.
